Recipe:
Onion recipe dough is made with both hot and warm water.
3 1/2 cup of all-purpose flour (of GF flour)
1 tbs of salt
Gently mix in 3 oz hot water
Stir to combine and then mix in 6 oz of room temperature water
Knead for 10 min then cover to let rest for 1hr
Onion paste:
Mix 1/2 cup of diced spring onion with 2 tsp of salt, 1 tsp of Chinese five spice powder,
and 2 tbs of flour
Heat 1/2 cup of cooking oil then pour into the onion mixture, stir
Making the pancake:
Roll the dough into a large rectangle sheet about 1/8 in thick
Spread 1/2 the onion paste sparsely and evenly over the sheet of dough
Fill the left and right 1/3 of sheet onto center, gently press the air out
Slowly roll the folded dough to a thing rectangle sheet like the one you had before
Spread the onion paste and fold the left and right 1/3 again
Once again roll the dough into rectangle sheet. Roll the sheet from one short side to the other like rolling a carpet.
Cut the roll into 1/4 in disks
Stack 3 disks and gently press together, using a rolling pin to roll it out thinly
The pancake is ready for the pan fry
On the stove-top in a large skillet:
Generously pour in cooking oil, cook evenly both sides about one min each on medium heat. Ready to serve and enjoy with soy sauce or GF tamari!
