Homemade Dill Pickles

In this video I show you how to make the tastiest dill pickles right at home! Pickling can seem intimating for many, and the intention is to leave you feeling empowered and inspired to both confidently and creatively dive into the world of homemade pickles!


Depending on the size of your jar(s), the aim is to pack the pickles in densely. Here are the ingredients and quantities are for a 2 qt jar that I did the demonstration with.

Rule of thumb is to fill up your container 1/2 way with liquid, as a guide for measuring.


INGREDIENTS:

2 lb Persian or Kirby cucumbers

8 cloves garlic, peeled and smashed

2 cups water

2 cups vinegar

3 tbs pickling salt             

2 tbs sugar 

1/2 tbs black peppercorns

1/4 cup dried red chili peppers (optional)

3 bay leaves

1/2 tbs coriander seeds (optional)

8 cloves garlic, peeled and smashed

1 bushel fresh dill or 4 tsp dill seeds


Warm up ingredients all together (if using fresh dill, omit for now), set aside, and let cool.

Pack pickles into jar, inserting a little at a time - brine mix and pickles, and also fresh dill, if using. Seal and store at room temperature for about 4 days. Pickles then are ready and next store in the fridge to last you for months! I suggest to enjoy them after they've been moved to the fridge for a few more days as they will increasingly get more flavorful and even crunchy!


*Tip: save the brine from your jar of pickles for the next batch of pickling or even add brine to your cooking recipes !
