Here I demonstrate how to craft phenomenal plant-based cheese! Flavor is smoked cheddar, and you can alternatively customize it to your liking with other seasonings or nuts too! This recipe makes a lot so it's perfect to store for various dishes or even freeze. ff
Ingredients & Quantities:
Part 1:
Combine the following ingredients in blender...
- Soaked cashews
- 1 cup, or any nuts...or any plant-based milk!
- Light miso paste - 1 tsp
- Nutritional yeast - 1/2 cup
- Onion powder - 1 tsp
- Smoked paprika - 1 tbs
- Cayenne - 1/4 tsp
- Lemon juice - 2 tbs
- Extra Virgin Olive oil - 2 tbs (or any neutral oil)
- Red bell pepper - 1/4 cup, for color
- Salt - pinch
- Garlic - 1 clove
- Water - 1/2 cup
Blend on high until smooth... Set cheese blend aside.
Part 2:
On the stove top, using a small pot - boil 1 cup of water, then briskly whisk in 1 tbs agar agar powder. Next immediately pour mixture into blender and blend all together until very smooth. Using a greased springform pan or bowl, quickly pour in mixture.
Place cheese in pan/bowl (uncovered) into fridge to allow cheese to cool and firm up in 30 min to 1 hour. Tip: place the freezer to speed up process by 15-20 min!
Pop out of pan/bowl (use silicone scraper or knife if needed, to gently remove), slice, and enjoy!
Cheese goes great on pizza or "burgers" because it melts beautifully - or try even grating it...
